Cajun Swordfish Skewers with BBQ Corn

  1. Thread the swordfish evenly onto 12 pre-soaked wooden skewers.
  2. Spray with the olive oil then dust with Cajun seasoning.
  3. Refrigerate 30 minutes.
  4. Spray the corn with oil then BBQ for 10-15 minutes turning occasionally until cooked and lightly blackened, remove and keep warm.
  5. BBQ the swordfish skewers on an oiled grill plate for 5-8 minutes turning once, until browned and cooked through.
  6. Place onto serving plates with corn cobs, salad and lemon wedges.
  7. Drizzle skewers with dressing and serve immediately.
