Raspberry Mango Salad
- 2 cups arugula
- 1 cup torn bibb lettuce or 1 cup boston lettuce
- 12 cup watercress, stems removed
- 1 cup diced mango
- 34 cup fresh raspberry
- 14 cup crumbled blue cheese
- 1 tablespoon olive oil
- 1 tablespoon water
- 1 tablespoon raspberry vinegar
- 18 teaspoon salt
- 18 teaspoon black pepper
- Combine arugula, lettuce, watercress, mango raspberries and cheese in medium bowl.
- Shake remaining ingredients in small jar.
- Pour over salad; toss to coat.
- Serve immediately.
