Easy Pork Bahn Mi with Sweet Potato Fries

  1. Preheat oven to 475 F.
  2. Place sliced potatoes in a large pot of cold water.
  3. Bring to a boil then let potatoes cook for five minutes, or until tender.
  4. The potatoes should be cooked through.
  5. Drain potatoes and toss with olive oil, garlic powder, salt and pepper.
  6. Dont be nervous if the potatoes start to fall apart slightly.
  7. This will help them crisp up in the end.
  8. Place potatoes on a greased baking sheet.
  9. Bake for 40 minutes, flipping potatoes halfway through to get both sides crisp.
  10. Whisk the soy sauce, rice vinegar, brown sugar, garlic and ginger in a bowl.
  11. Add sliced pork to bowl and toss to coat.
  12. Let pork marinate for 10 minutes.
  13. Heat a grill pan to medium heat.
  14. Cook pork for about 2 minutes per side, stirring as you go.
  15. The pork will cook quickly since it is sliced so thin.
  16. Assemble sandwich by lightly toasting the baguette and spreading hoisin onto the inside.
  17. Fill with pork, fresh veggies and peanuts.
  18. Serve with sweet potato fries.
