Viki's Hummus Burger Recipe
- 12 cup quinoa
- 1 cup vegetable broth
- 1 (15 ounce) can chickpeas (drained and rinsed)
- 1 lemon (zested and juiced)
- 1 tablespoon sesame paste (Tahinni, prepared sesame seed paste)
- 1 garlic clove
- 1 tablespoon mint leaf
- 1 tablespoon fresh parsley leaves
- 1 dash salt (to taste)
- 12 teaspoon pepper (to taste)
- 18 cup green onion (1 diced)
- Bring to boil and cook quinoa in 1 cup of broth until all broth is absorbed, let cool to warm and place in food processor.
- Add rest of ingredients.
- Process until mixture is smooth mixture.
- Add 1Tablespoon vegetable broth if desired or needed.
- Make balls of mixture and then shape into patties.
- Cook on griddle or heavy pan (preheated with 2 T olive oil or sprayed with PAM).
- Serve on toasted sesame seed bun or bagel.
