Mom's Chocolate Caramel Apples
- 4 tart apples
- 1 ounce unsweetened baking chocolate
- 14 cup light corn syrup
- 1 cup brown sugar
- 14 cup milk
- 2 tablespoons butter
- 4 wooden sticks
- Wash apples, insert wooden sticks into core at stem side.
- Boil water in bottom of double-boiler.
- Place chocolate, corn syrup, sugar and milk in top of double-boiler.
- Cook, stirring occasionally, until 250 degrees.
- Add butter, mix well, then remove from boiling water and allow to cool for 2-3 minutes.
- Place mixture again above boiling water, remove entire double-boiler from heat, but keep mixture over the hot water in order to keep caramel warm and soft for dipping.
- Dip apples in caramel, stand on waxed paper to cool.
- Spoon caramel over the stick-end if necessary.
