Mom's Chocolate Caramel Apples

  1. Wash apples, insert wooden sticks into core at stem side.
  2. Boil water in bottom of double-boiler.
  3. Place chocolate, corn syrup, sugar and milk in top of double-boiler.
  4. Cook, stirring occasionally, until 250 degrees.
  5. Add butter, mix well, then remove from boiling water and allow to cool for 2-3 minutes.
  6. Place mixture again above boiling water, remove entire double-boiler from heat, but keep mixture over the hot water in order to keep caramel warm and soft for dipping.
  7. Dip apples in caramel, stand on waxed paper to cool.
  8. Spoon caramel over the stick-end if necessary.
