Lamb Love Letters
- 1 Tbsp. oil
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 1 lb. (450 g) lean ground lamb
- 1/4 cup Back to Nature Trail Mix - Almonds, Raisins, Cranberries and Pistachios, chopped
- 1 tsp. ground cinnamon
- 1 tsp. ground cumin
- 1 tsp. crushed red pepper
- 1 tsp. ground ginger
- 1 tsp. paprika
- 1/4 cup Kraft Chicken'N Rib BBQ Sauce
- 2 Tbsp. chopped fresh mint
- 12 sheets frozen phyllo dough (1/2 of 450-g pkg.), thawed
- 1 Tbsp. margarine, melted
- Heat oil in large skillet on medium-high heat.
- Add onions and garlic; cook and stir 2 min.
- or until onions are crisp-tender.
- Add next 7 ingredients; cook 10 min.
- or until lamb is done, stirring frequently.
- Drain.
- Stir in barbecue sauce and mint.
- Refrigerate 15 min.
- Heat oven to 400 degrees F. Spray 1 phyllo sheet with cooking spray; top with 2 of the remaining phyllo sheets, spraying each sheet with additional cooking spray.
- Cut lengthwise into 4 strips.
- Spoon about 2 Tbsp.
- lamb mixture about 1 inch from end of each strip.
- Fold end over filling at 45 degrees angle.
- Continue folding in this fashion entire length of phyllo strip.
- Place, seam-side down, on baking sheet sprayed with cooking spray.
- Repeat with remaining phyllo sheets and lamb mixture.
- Bake 15 min.
- or until crisp and golden brown.
