La Manzania Frittata
- 1 cup chorizo, sliced into 1/2-inch thick pieces
- 1/2 cup red onion, diced
- 2 tablespoons jalapeno, finely diced
- 1/2 cup red bell pepper
- 8 eggs
- 1/2 cup milk
- 1/2 teaspoon sea salt
- 1 teaspoon pepper
- 2 (9-inch) flour tortillas
- 1/4 cup shredded jack cheese
- 1/4 cup shredded Cheddar
- 1/2 cup scallions, diced
- Pre heat oven to 375 degrees F.
- In a skillet over high heat, cook chorizo.
- When the sausages are almost cooked through, add the onion, jalapeno, and pepper and saute until vegetables are soft.
- Remove chorizo mixture to a bowl and let it cool.
- In medium bowl, mix eggs, milk, and salt and pepper.
- Add the chorizo mixture to the egg mixture.
- Spray nonstick cooking spray on a pie pan, place 1 tortilla and pour the egg/chorizo mixture into the pan.
- Bake for 15 minutes.
- Remove from oven, top with another tortilla and the shredded cheeses and bake for another 5 minutes.
- Remove from oven and garnish with scallions.
- Serve immediately.
