Banana Pecan Breakfast Bread

  1. In a medium bowl, mash the bananas.
  2. Add applesauce, sugar, eggs and yogurt; combine thoroughly.
  3. In a small bowl, combine flours, flax, baking soda, cinnamon and salt.
  4. Add dry ingredients to wet ingredients; stir until just combined.
  5. Gently stir in vanilla and pecans.
  6. Pour batter into a greased 8x8 pan.
  7. Bake at 350 for 50 minutes.
  8. Bread is done when the top springs back when lightly pressed.
