Canadian Maple Leaves Cookies
- 4 cups all purpose flour
- 1 cup butter, softened
- 2 sticks)
- 3/4 cup light brown sugar, packed
- 1/2 cup pure maple syrup,
- maple flavor syrup
- 1 tsp. maple flavouring, (optional)
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- 3/4 tsp. salt
- 2 lg. eggs
- In a large bowl, measure all ingredients.
- With mixer at low speed, beat ingredients until well blended, occasionally cleaning the bowl with rubber spatula.
- With hands, shape dough into ball; wrap with plastic wrap and refrigerate 1 hour or until dough is easy to handle.
- (or, place dough in freezer 30 minutes.)
- Preheat oven to 350 F. Grease large cookie sheet, or use parchment paper greased.
- On lightly floured surface, with floured rolling pin, roll out one-third of dough 1/8 inch thick; keep remaining dough refrigerated.
- With floured 3 1/2 inch leaf shaped cookie cutter, cut dough into leaves; score leaf veins in dough with tip of knife.
- Place cookies, 1 inch apart, on cookie sheet.
- Bake cookies 10 minutes or until golden.
- With pancake turner, remove to wire racks to cool.
- Repeat with remaining dough and trimmings.
- Store in tightly covered container.
- Makes about 4 dozen.
