Low-Fat Banana Muffins
- 2 lg. ripe bananas, mashed
- 1-1/2 cup self-raising flour, sifted
- 1 tsp. baking powder
- 1 tsp. nutmeg powder
- 8 tbsp. olive oil
- 3 tbsp. low-fat milk
- 1/4 cup sugar (or less if desired)
- chopped nuts (optional)
- Preheat the oven to 200C.
- Arrange 6 paper cases in a deep muffin tin.
- Sift the flour and baking powder into a mixing bowl.
- Rub the oil into the flour until the mixture resembles breadcrumbs.
- Stir in the sugar and nutmeg powder.
- Add the mashed bananas and milk.
- You may want to add an extra tbsp.
- of milk if the bananas are not very creamy.
- Spoon into prepared muffin tin and bake for 20-25 minutes.
