Sausage & Spinach Pie Recipe

  1. Remove sausage meat from casings.
  2. In 10-inch skillet over medium heat, cook sausage till well browned, stirring frequently to break up sausage.
  3. Spoon off fat from skillet.
  4. Reserve 1 egg yolk.
  5. In large bowl, combine remaining Large eggs and egg white with sausage, spinach, Mozzarella and ricotta.
  6. Prepare pie crust mix as label directs for 2-crust pie.
  7. Divide pastry into 2 pcs, 1 slightly larger; shape each piece into a ball.
  8. On lightly floured surface, with floured rolling pin, roll larger ball into a round 2 inches larger all around than 9-inch pie plate; use to line pie pan.
  9. Spoon sausage mix into pie crust.
  10. Preheat oven to 375 degrees.
  11. Roll remaining pastry into 10-inch round.
  12. Place pastry over filling, trim pastry edge, leaving 1/2 inch overhang.
  13. Fold overhang under and press gently all around rim to make stand up edge.
  14. Cut slits in top.
  15. Mix reserved egg yolk with 2 tsp.
  16. water and brush over top.
  17. Bake for 1 1/4 hrs.
  18. Let stand 10 min before serving.
