Sun-Dried Tomato Salmon

  1. For each serving: Brush one side of 1 salmon fillet with 1 tsp.
  2. of the dressing.
  3. Cook in small skillet on medium-high heat 2 to 3 min.
  4. Turn and brush with additional 1 tsp.
  5. dressing.
  6. Continue cooking until salmon flakes easily with fork.
  7. Serve with 1 grilled eggplant slice and 1/2 cup Sun-Dried Tomato Couscous with Grilled Vegetables.
