Appetizer Cheesecake

  1. Cook bacon until crisp.
  2. Remove to paper towels.
  3. In the drippings, saute onion and garlic until tender.
  4. Remove with slotted spoon.
  5. In a bowl, combine the ricotta, half and half, flour, salt and cayenne; beat until smooth.
  6. Beat in eggs.
  7. Set aside 3 tablespoons bacon for garnish, if desired.
  8. Stir green onions, sauteed onion and garlic and remaining bacon into the egg mixture.
  9. Pour into a greased 8-inch springform pan.
  10. Bake at 350 degrees for 40 minutes or until center is set.
  11. Cool slightly on a rack.
  12. Sprinkle with reserved bacon, if desired.
  13. Serve with crackers.
