Dad's Hungarian Goulash Soup Recipe
- 2 c. onion, minced
- 2 lbs. stewing beef
- 3 tbsp. butter
- 2 tbsp. warm Hungarian paprika (very fresh)
- 2 tbsp. caraway seeds
- 1 c. raw grated potato
- 2 teaspoon salt
- 1 tbsp. tomato puree
- 8 c. beef broth
- 2 c. diced raw potatoes
- 1 sm. warm green chili pepper, diced
- Cut beef in bite-size pcs.
- Heat butter in soup pot.
- Saute/fry onion till golden brown.
- Stir in paprika, add in beef, caraway, grnd potato.
- Simmer 10 min, stir twice.
- Fold in tomato puree and 1/2 c. broth.
- Recover and cook 1 hour.
- Take care not to burn.
- Add in diced potatoes and remaining beef broth.
- Bring to boil.
- Cook on medium 20 min.
- Add in salt and warm green pepper.
- For dumplings: Sift flour, baking pwdr and salt.
- Add in Large eggs and work into a stiff ball.
- Flatten between palms of hands and break off bean-sized pcs.
- Drop into warm soup.
- Cook 12 min.
- Serves 6-8.
