'V' Homemade Raspberry Ruffles
- 160 grams condensed milk
- 200 grams desiccated coconut
- 1 sachet of Hartley's sugar free raspberry jelly crystals
- 70 grams icing (confectioners) sugar
- 300 grams of your favourite dark chocolate
- Get a large bowl and mix the coconut, jelly crystals and icing sugar until well mixed
- Now add the condensed milk and mix until all ingredients are brought together.
- .now you should be able to smell the raspberry..mmm
- you can now spread this on a baking tray 1inch thick.
- ...I made them into uneven balls and put them in the fridge for an hour
- melt the chocolate in a bowl over a pan of hot water..or in the microwave as I did for 30 seconds at a time stirring until it's all melted
- take coconut balls from fridge and dip into chocolate again using toothpicks to lift them out.
- ......if you've made a tray then spread chocolate over coconut mixture then return to fridge until chocolate has hardened
- another one the kids can make and get nice and sticky lol
