Broiled Burgers Italian-Style

  1. Preheat the broiler to high.
  2. Put the beef in a mixing bowl and set aside.
  3. Heat the butter in a saucepan and add onion and garlic.
  4. Cook, stirring occasionally, until wilted.
  5. Let cool.
  6. Add onion mixture to the beef.
  7. Add salt and pepper, and blend well with the fingers.
  8. Divide the mixture into 4 equal portions and shape into patties, each about an inch thick.
  9. Cut away and discard the core of the tomato.
  10. Cut into 4 slices, each about the same size.
  11. Sprinkle with salt and pepper.
  12. For each tomato slice, cut one anchovy fillet in half crosswise and arrange the halves on the slice in a cross.
  13. Brush with a little oil from the anchovy can.
  14. Arrange patties on a grill for broiling.
  15. Place the rack under the broiler with top of patties about 4 inches from the heat source.
  16. Broil 2 to 3 minutes, then turn patties.
  17. Place under broiler once more, leaving the broiler door open.
  18. Let broil 2 to 3 minutes.
  19. Top each patty with a slice of mozzarella.
  20. Center one anchovy-topped tomato slice on each patty.
  21. Place under broiler and let broil 2 minutes longer with door closed.
