Broiled Burgers Italian-Style
- 1 1/2 pounds ground lean beef
- 1 tablespoon butter
- 1/2 cup finely chopped onion
- 1 teaspoon finely minced garlic
- Salt to taste if desired
- Freshly ground pepper to taste
- 1 red ripe tomato, about 1/2 pound
- 4 flat anchovy fillets plus some of the oil in which they are packed
- 4 rectangles sliced mozzarella cheese, about 1/4 pound, each slice about 1/4 inch thick
- Preheat the broiler to high.
- Put the beef in a mixing bowl and set aside.
- Heat the butter in a saucepan and add onion and garlic.
- Cook, stirring occasionally, until wilted.
- Let cool.
- Add onion mixture to the beef.
- Add salt and pepper, and blend well with the fingers.
- Divide the mixture into 4 equal portions and shape into patties, each about an inch thick.
- Cut away and discard the core of the tomato.
- Cut into 4 slices, each about the same size.
- Sprinkle with salt and pepper.
- For each tomato slice, cut one anchovy fillet in half crosswise and arrange the halves on the slice in a cross.
- Brush with a little oil from the anchovy can.
- Arrange patties on a grill for broiling.
- Place the rack under the broiler with top of patties about 4 inches from the heat source.
- Broil 2 to 3 minutes, then turn patties.
- Place under broiler once more, leaving the broiler door open.
- Let broil 2 to 3 minutes.
- Top each patty with a slice of mozzarella.
- Center one anchovy-topped tomato slice on each patty.
- Place under broiler and let broil 2 minutes longer with door closed.
