Meatball Souvlaki

  1. Preheat oven to 400 degrees F. In a large bowl, mix together the ground beef, ground turkey, egg, bread crumbs, dijon mustard, oregano, basil, salt and pepper until well combined.
  2. Roll mixture into meatballs (about 20-24) and place them on a broiler pan lightly sprayed with cooking spray.
  3. Place in preheated oven and bake for 1518 minutes until cooked through.
  4. While meatballs are cooking, whisk together chopped cucumber, Greek yogurt, garlic and dill in a small bowl.
  5. Add salt and pepper to taste and cover and refrigerate until ready to eat.
  6. Prepare toppings and serve hot meatballs in pita bread with the tzatziki and toppings.
  7. The meatballs also freeze well after baking so I often make a double batch of the meatballs when making this meal and freeze half for another night.
  8. Just allow them to cool completely and then freeze in a large ziplock bag.
