Quick Garlic-Lemon Broccoli
- 3 heads broccoli
- 12 cup water
- 3 garlic cloves, minced
- 1 -2 green chili pepper, chopped
- 2 tablespoons lemon juice
- 1 lemon, zest of
- Separate broccoli florets from stalks, break florets into smallish pieces.
- Peel the stalks (either with a peeler or by "boxing" them with a knife).
- Chop into 1/2 inch pieces.
- In a 12" skillet (you'll need the room), cover and cook florets and stems with water over high heat for 2 minutes.
- Remove cover, continue to cook over medium-high heat until water has evaporated and broccoli is tender, about 5 minutes.
- Clear out the center of the pan, add garlic, chilies, and lemon zest.
- Cook for about 15 seconds before stirring it into the broccoli.
- Remove from heat.
- Stir in lemon juice.
