Quick Garlic-Lemon Broccoli

  1. Separate broccoli florets from stalks, break florets into smallish pieces.
  2. Peel the stalks (either with a peeler or by "boxing" them with a knife).
  3. Chop into 1/2 inch pieces.
  4. In a 12" skillet (you'll need the room), cover and cook florets and stems with water over high heat for 2 minutes.
  5. Remove cover, continue to cook over medium-high heat until water has evaporated and broccoli is tender, about 5 minutes.
  6. Clear out the center of the pan, add garlic, chilies, and lemon zest.
  7. Cook for about 15 seconds before stirring it into the broccoli.
  8. Remove from heat.
  9. Stir in lemon juice.
