Cashew Rice

  1. Brown 1 cup brown rice and 1 chopped onion in 3/4 cube of butter or margarine.
  2. Add 3 teaspoons chicken bouillon and 3 cups water.
  3. Bring to to a boil and simmer, covered, 45 minutes.
  4. Stir in 1 can salted cashew nuts and 1/2 cup shredded coconut.
  5. Heat through.
