Festive Chicken Dip
- 1 1/2 lb. boneless, skinless chicken breasts, finely chopped (about 3 c.)
- 1/4 c. lime juice, divided
- 2 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 (16 oz.) can refried beans
- 1 1/2 c. sour cream, divided
- 1 (1 1/4 oz.) pkg. dry taco seasoning mix, divided
- 1 Tbsp. picante sauce
- 1 avocado, chopped
- 1 Tbsp. olive oil
- 1 c. (4 oz.) shredded sharp Cheddar cheese
- 1 small onion, finely chopped
- 2 tomatoes, finely chopped
- 1 (2 1/4 oz.) can sliced black olives, drained and chopped
- 1 (10 oz.) bag tortilla chips
- fresh cilantro (for garnish)
- Place chicken in a small bowl. Sprinkle with 3 tablespoons lime juice, garlic, salt and pepper.
- Mix well.
- Set aside.
