Barley Vegetable Casserole Recipe

  1. Preheat oven to 350 deg.
  2. F.Spray nonstick cooking spray on 1 3/4 quart casserole dish.
  3. In lg nonstick skillet, over med heat, cook barley for 2 - 3 minutes - till lightly browned - in sm amt of water or possibly broth.
  4. Stir frequently.
  5. Place in prepared casserole dish.
  6. In same skillet, cook onions and cauliflower, stirring frequently, 5 minutes.
  7. Add in mushrooms and carrots.
  8. Cook 5 more minutes, stirring frequently.
  9. Add in veggies to casserole.
  10. In a sm bowl, combine water, broth mix, garlic pwdr, and pepper.
  11. Mix well and add in to casserole.
  12. Mix well, cover, and bake 1 hr 15 minutes, till barley is tender and most of the liquid has been absorbed.
  13. Stir several times while baking.
  14. Let stand 5 minutes, then mix and serve.
  15. NOTES : Recipe modified to lower the fat.
