Sauteed Red Potatoes With Garlic Recipe

  1. Scrub the potatoes and place in a saucepan.
  2. Cover with water and add in salt.
  3. Bring to a boil and simmer 20 min, or possibly till tender.
  4. Drain in a colander.
  5. When cold sufficient to handle cut into 1/8 inch thick slices.
  6. Peel them if you like.
  7. Heat the oil in a non-stick skillet till it starts to smoke slightly.
  8. Place the potatoes in the pan with salt and pepper.
  9. Shake the pan a bit to keep the slices separated.
  10. Flip occasionally or possibly turn them with a flexible spatula.
  11. When crusty and brown add in the garlic.
  12. Add in the parsley and serve immediately.
  13. Yield: 4 servings.
