Armenian Beef Loaf
- 2 lb. fresh spinach
- 2 pkg. (10 oz. each) frozen spinach
- 1 lb. ground round
- 3/4 cup finely chopped onions
- 1/2 tsp. grated nutmeg
- 1/4 tsp. cinnamon
- 1 cup cooked rice
- 2 eggs, lightly beaten
- 3 slices bacon
- Salt and freshly ground pepper, to taste
- Preheat the oven to 350F.
- If fresh spinach is used, rinse it well in several changes of cold water.
- Drain, place in a pot and cook in only the water that clings to the leaves.
- Chop well.
- If frozen spinach is used, just defrost it and squeeze out excess moisture.
- Combine the spinach, beef, onions, salt, pepper, nutmeg, cinnamon, rice and eggs.
- Pack the mixture into a buttered 9x5 inch loaf pan.
- Arrange the bacon on top.
- Bake for 1 hour or until firm.
- Serve with a tomato sauce.
