Fresh Spring Rolls
- 1 (12 ounce) package rice noodles
- 16 rice paper sheets
- 2 cups warm broth or 2 cups water, in shallow bowl
- 16 slices lunch meat (turkey or beef)
- 2 cups cleaned sliced shrimp, cooked
- 1 12 cups shredded carrots
- 2 cups steamed bean sprouts
- 2 cups fresh basil leaves
- Cook rice noodles by package directions and set aside.
- Lay sliced meat, shrimp, carrots, sprouts and leaves on plate in a buffet style.
- Take one wrapper and gently submerge into warm liquid for 1/2 minute to soften.
- Put a small amount of noodle and other items on the wrapper and fold.
- Do not overfill.
- Dip into peanut sauce or hot sauce.
