Baked Oysters In Shell
- 2 doz. large oysters (in shell)
- 1 c. butter
- 2 Tbsp. finely cut parsley
- freshly ground pepper
- 1 lemon
- 1 1/2 c. buttered bread crumbs
- 1 1/2 tsp. salt
- Scrub oyster shells thoroughly.
- Rinse under cold running water.
- Open oysters using the method recommended by the Fishery Council.
- Discard flat shell.
- Keep deep halves for use.
- Start oven at moderately hot (400u0b0).
- Melt butter, season with parsley and a quick grind of black pepper.
- When butter is slightly cooled, roll each oyster in it barely coating oyster.
- Return oyster to shell.
- Squeeze lemon juice over oysters and cover each with crumbs.
- Place filled shells in shallow baking pan.
- Bake 5 minutes.
- Add light sprinkling of salt to oysters and continue baking 3 minutes.
- Serve hot.
