Spiced Rice Pudding

  1. Combine rice, milk, salt and spices in a saucepan.
  2. Heat at medium until just barely boiling.
  3. Simmer 3 minutes.
  4. Remove from heat and add extracts and Equal.
  5. Cool to room temperature.
  6. Transfer to servingware.
  7. Place a layer of plastic wrap in contact with the surface of the pudding to prevent a skin from forming.
  8. Cover tightly and refrigerate.
  9. Serve cold.
