Crunchy Chewy Irresistible Low Fat Banana Nut Muffins

  1. Preheat oven to 400F
  2. Spray a 12-cup muffin tin with vegetable cooking spray.
  3. In a medium bowl, combine flour, sugar, baking powder, salt and cinnamon.
  4. Set aside.
  5. In a large bowl, using a wire whisk, beat egg whites lightly.
  6. Stir in bananas, corn syrup and milk.
  7. Gently add flour mixture to bananas and stir until blended.
  8. Spoon into prepared muffin tins, filling each 2/3 full.
  9. Bake for 20 to 25 minutes, or until center is set.
  10. Cool in pan for 5 minutes.
  11. Remove and cool on a wire rack.
