Dark Chocolate Chunk Protein Muffins
- 1 cup Gluten Free Bisquick Baking Mix
- 1/2 cups Gluten Free Old Fashioned Oats
- 1 package (3.9 Oz. Size) Dry Chocolate Pudding Mix
- 13 cups Protein Powder (I Used Chocolate MyoFusion)
- 1 Tablespoon Cocoa Powder
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1-13 cup Milk
- 2 whole Eggs, Beaten
- 1/2 cups Semi-Sweet Chocolate Chips
- Preheat oven to 350 F. Spray a 12-count standard size muffin tin with cooking spray and set aside.
- Mix the baking mix, oats, pudding mix, protein powder, cocoa powder, baking powder, and salt in a large mixing bowl.
- Add the milk and eggs until the batter is well combined.
- Fold in the chocolate chips.
- Scoop batter into the muffin tin (an ice cream scoop makes this easy) and bake for 20 minutes.
