Dark Chocolate Chunk Protein Muffins

  1. Preheat oven to 350 F. Spray a 12-count standard size muffin tin with cooking spray and set aside.
  2. Mix the baking mix, oats, pudding mix, protein powder, cocoa powder, baking powder, and salt in a large mixing bowl.
  3. Add the milk and eggs until the batter is well combined.
  4. Fold in the chocolate chips.
  5. Scoop batter into the muffin tin (an ice cream scoop makes this easy) and bake for 20 minutes.
