Hot Tomato Relish (Gujarati Kasundi)

  1. Heat oil in a medium-size skillet over medium-high heat.
  2. Add mustard and garlic.
  3. Cook, stirring, until mixture starts to brown, about 4 minutes.
  4. Add turmeric, cayenne, salt and tomatoes.
  5. Stir and cook for 2 minutes.
  6. Add vinegar and bring to a boil.
  7. Reduce heat, cover, and simmer until thick, about 10 minutes.
  8. Spoon into clean jars and seal.
