Madame's Orange Or Tangerine Peel Beef Recipe

  1. Combine sauce ingredients.
  2. Set aside.
  3. Cut beef into thick slices and lb.
  4. till 3/8 inch thick.
  5. Marinate in soy sauce and sugar 10 min.
  6. Add in egg and flour, mix with hand.
  7. Heat oil for deep frying.
  8. Slide beef into oil piece by piece to prevent sticking together.
  9. Fry till crispy.
  10. Remove.
  11. Fry again.
  12. Drain.
  13. Remove.
  14. Reheat 2 Tbsp.
  15. oil in wok.
  16. Stir fry chili peppers and orange peel till "black".
  17. Add in sauce.
  18. Bring to boil.
  19. Thicken with dissolved cornstarch.
  20. Add in beef.
  21. Stir-fry 1 minute more.
  22. Remove peppers prior to serving.
