Double Banana Muffins
- 1 cup flour
- 1/2 cup sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1/4 cup oil
- 2 medium ripe bananas, mashed (about 1 cup)
- 1-1/2 cups banana nut whole grain cereal flakes
- Preheat oven to 350F.
- Mix flour, sugar, baking soda and salt in large bowl.
- Beat eggs and oil in separate bowl with wire whisk until well blended; stir in bananas.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Stir in cereal.
- Spoon batter evenly into 12 greased medium muffin cups, filling each cup 2/3 full.
- Bake 25 to 30 min.
- or until golden brown.
- Serve warm.
