Ricotta-Spinach Calzone
- 1 package frozen chopped spinach
- 1 c. part-skim ricotta cheese
- 1 c. mozzarella cheese
- 1 tbsp. cornstarch
- 1/2 tsp. dried oregano leaves
- 1 tube
- 1/2 c. marinara sauce
- Preheat oven to 400 degrees F. Remove frozen spinach from package.
- In small microwave-safe bowl, heat spinach in microwave oven on High 2 to 3 minutes or just until spinach is mostly thawed but still cool enough to handle.
- Squeeze spinach to remove excess water.
- Meanwhile, in small bowl, combine ricotta, mozzarella, cornstarch, and oregano; set aside.
- Spray large cookie sheet with nonstick cooking spray.
- Unroll pizza dough on center of cookie sheet.
- With fingertips, press dough into 14- by 10-inch rectangle.
- Spread cheese mixture lengthwise on half of dough, leaving 1-inch border.
- Spoon marinara sauce over cheese mixture; top with spinach.
- Fold other half of dough over filling.
- Pinch edges together to seal.
- Bake calzone 20 to 25 minutes or until well browned on top.
- Cut calzone into 4 equal pieces to serve.
