Ricotta-Spinach Calzone

  1. Preheat oven to 400 degrees F. Remove frozen spinach from package.
  2. In small microwave-safe bowl, heat spinach in microwave oven on High 2 to 3 minutes or just until spinach is mostly thawed but still cool enough to handle.
  3. Squeeze spinach to remove excess water.
  4. Meanwhile, in small bowl, combine ricotta, mozzarella, cornstarch, and oregano; set aside.
  5. Spray large cookie sheet with nonstick cooking spray.
  6. Unroll pizza dough on center of cookie sheet.
  7. With fingertips, press dough into 14- by 10-inch rectangle.
  8. Spread cheese mixture lengthwise on half of dough, leaving 1-inch border.
  9. Spoon marinara sauce over cheese mixture; top with spinach.
  10. Fold other half of dough over filling.
  11. Pinch edges together to seal.
  12. Bake calzone 20 to 25 minutes or until well browned on top.
  13. Cut calzone into 4 equal pieces to serve.
