Simple Vegetable Soup with Rice

  1. Heat the broth to a low boil; stir in the salt as needed, the pepper, and the rice.
  2. Return to a boil, stir, and cover tightly.
  3. Cook over low heat for 12 to 15 minutes, until the rice is tender.
  4. Adjust the seasoning, and serve right away in warm bowls, with freshly grated cheese, extra-virgin olive oil, and other garnishes (see page 60).
