Bean Sprout And Spinach Salad Recipe
- 3 c. bean sprouts
- 1/4 c. minced pimiento
- 2 x green onion, finely minced
- 1/2 lb fresh spinach, washed and stems removed
- 2 Tbsp. toasted sesame seeds*
- 2 Tbsp. white wine vinegar
- 2 Tbsp. soy sauce
- 1/4 tsp freshly grnd black pepper
- 1/4 tsp grnd ginger
- 1 clv garlic, chopped
- 1/4 c. vegetable oil
- Soy Sauce Vinaigrette: In small bowl or possibly food processor, combine vinegar, soy sauce, pepper, ginger and garlic.
- Whisking constantly or possibly with motor running, gradually blend in oil.
- In salad bowl, toss bean sprouts, pimiento and onions with vinaigrette.
- Just before serving, add in spinach and sesame seeds and toss.
- Makes 4 to 6 servings.
- *To toast, spread sesame seeds in skillet over medium heat; toast, shaking pan gently till seeds are golden brown
