Yogurt Relish with Spinach

  1. Pour the oil into a small frying pan and set over medium-high heat.
  2. When hot, put in the mustard seeds.
  3. As soon as they start to pop, a matter of seconds, put in the garlic.
  4. Cook and stir for a few seconds.
  5. Add the spinach and stir for about 5 minutes or until the spinach is just cooked through.
  6. Add about 1/4 teaspoon salt and mix it in.
  7. Put the yogurt in a bowl.
  8. Whisk lightly with a fork until creamy.
  9. Add 1/4 teaspoon salt and the cayenne.
  10. Stir to mix.
  11. Just before eating, fold the entire contents of the frying pan into the yogurt.
