Broccoli in Sesame Vinegar Miso
- 1 head Broccoli
- 2 tbsp Red miso
- 2 tbsp Sugar
- 2 tsp Mirin
- 1 tsp Vinegar
- 1 heaping tablespoon Ground sesame seeds
- Separate the broccoli florets from the stems.
- Break the florets into small clusters, and cut the stems vertically.
- Boil the stems for 1 minute in boiling water.
- Add the florets and boil for 3 minutes.
- *The boiling time is just a guide, it will vary depending on the freshness of the broccoli.
- Remove a floret and check to see how soft it is.
- If it's still hard, boil for a bit longer.
- When the broccoli has reached your desired level of softness, drain in a sieve.
- I heard that broccoli loses nutrients when boiled in a lot of water, but I always do it this way.
- If you are using a microwave, just do as you normally would up to this step.
- Make the vinegar miso.
- First, mix together the ingredients marked , then mix in the vinegar marked .
- It's difficult to mix when runny, so add the vinegar last.
- Finally, add the sesame seeds, and your sesame vinegar miso is done!
- Serve it on a small plate, and enjoy!
