Grilled Mustard Chicken Wings
- 2 lbs chicken wings
- 14 cup stone ground mustard
- 4 scallions, chopped
- 4 garlic cloves, chopped
- 12 lemon, zested and juiced
- 14 cup olive oil
- 12 teaspoon red pepper flakes (optional)
- 2 tablespoons honey
- 1 teaspoon Hungarian paprika
- 1 tablespoon red wine vinegar
- 1 12 teaspoons fine sea salt
- 1 teaspoon dried thyme
- Rinse your chicken, drain, and pat dry.
- Set aside.
- In a bowl, mix together all the following 11 ingredients.
- Adjust the salt, heat, acid, and spice seasoning according to your tastes.
- Add 2/3 of the marinade into a ziplock bag, add the chicken wings, massage the bag to coat the chicken, and refridgerate overnight.
- Reserve the remaining 1/3 for brushing on your wings later.
- A half hour before grilling, remove from the fridge to allow the chicken to return to room temperature.
- Pre-heat grill on med-high heat.
- Place chicken on the grill and cook for 5-6 minutes on each side, basting with the reserved sauce 1-2 minutes before being done.
