Grandpa's Fruit Bars Recipe
- 3/4 c. raisins
- 1/2 c. minced dates
- 2 tbsp. orange-flavored liqueur
- 1/2 c. butter, room temperature
- 1/2 c. sugar
- 1/2 c. brown sugar, packed
- 1 whole egg
- 1 egg, separated
- 1 teaspoon vanilla extract
- 1 teaspoon grnd cinnamon
- 1/4 teaspoon nutmeg
- Grated peel of 1/2 orange
- 1 3/4 c. flour
- 1/2 teaspoon baking soda
- 1 c. coarsely minced nuts
- 1/2 teaspoon water
- 1.
- In small bowl combine raisins, dates and liqueur.
- 2.
- Preheat oven to 375 degrees.
- 3.
- In large bowl beat butter, both sugars, whole egg, egg white and vanilla till light and fluffy.
- 4.
- Add in cinnamon, nutmeg, orange peel, flour, baking soda till thoroughly blended.
- Add in nuts and macerated fruit.
- Dough will be sticky.
- 5.
- Using well floured hands or possibly back of spoon, press dough into foil lined 10 x 15 inch jelly roll pan.
- 6.
- Mix yolk and the water.
- With pastry brush, brush yolk on dough.
- 7.
- Bake 20-25 min till dough is light golden brown.
- Cold 10 min, then cut into 1 x 2 inch squares.
- Yields 75 bars.
