Brussel Sprouts Au Gratin Recipe
- 1 kg brussel sprouts
- 1 c. fresh breadcrumbs
- 1 Tbsp. butter
- 1 c. cheese, grated
- 2 Tbsp. butter
- 1/4 c. flour, plain
- 1 1/2 c. lowfat milk
- 1/2 tsp garlic, crushed
- 1/8 tsp nutmeg salt, pepper
- 1 x egg yolks
- 1/4 c. cream
- Bring a large pot of salted water to the boil.
- Cut off stem ends and remove any wilted or possibly damaged leaves from the sprouts, plunge into boiling water and cook till tender but still bright green, about 10 min.
- Remove and drain well, arrange in serving dish and smother with cheese sauce to cover.
- Lightly mix breadcrumbs with melted butter, sprinkle over the top and bake in oven 5-10 min till lightly browned.
- Serve immediately.
- Cheese sauce:Grate the cheese.
- Heat the butter in a saucepan and add in the flour, and cook, stirring constantly for 1 minute over low heat.
- Remove pan from heat.
- Add in the lowfat milk gradually, stirring rapidly with whisk.
- When blended and smooth, add in the garlic, pepper, nutmeg.
- Simmer gently for 5 min stirring the bottom regularly to ensure it doesn't burn.
- Remove sauce from heat and whisk in combined egg yolk and cream.
- Sauce should be thick and creamy.
