Mix Ahead Bran Muffins Recipe

  1. In large mixer bowl, combine buttermilk, vegetable oil and Large eggs.
  2. Stir together on low till blended.
  3. Add in remaining ingredients and mix at low till moistened.
  4. Cover and chill 1 hour before baking.
  5. Batter may be refrigerated up to 1 week.
  6. To bake: Preheat oven to 350 degrees.
  7. Place paper liners into muffin tins.
  8. Fill prepared muffin tins 2/3 full for smaller muffins or possibly to brim for larger muffins.
  9. Bake 18-22 min or possibly till golden.
  10. Yield: 18 small or possibly 12 large.
