Ladybirds Apple Dumpings .

  1. PREPARING THE PASTRY : sift the flour into a bowl and add the caster sugar now add the cubed butter and rub into the flour mix with your fingertips until mixture resembles breadcrumbs then slowly add the lemon juice to the mix and mix well to form a manageable dough , knead a little , and divide the pastry into six equal portions and place each portion between two sheet of baking paper and flatten them into circles and then place into the fridge for at least 10 minutes to set and chill .
  2. APPLES : peel all six apples and then core them all .
  3. BUILDING THE DUMPINGS : take the prepared chilled pastry circles from the fridge and remove the top sheet of baking paper , now place one apple on each of the individual pastry circles and fill the centers of the apples , packed tight , with the brown sugar .
  4. now gather pastry up and around the apples covering it all over and use a little milk to join pastry ends together to seal it tight .
  5. now roll prepared dumpings lightly into a bowl with a little milk in it , shake excess milk off then roll into a bowl with caster sugar in it to cover all the outside of the dumpings , place back into refrigerator for about 10 minutes to set and chill before cooking .
  6. COOKING THE DUMPINGS : preheat oven to 200C / 400F .
  7. Place chilled prepared dumpings onto a baking paper lined oven tray and place in hot oven for 25-30 minutes or until pastry is golden and apples are tender when gently pieced with a skewer .
  8. remove from heat and place on serving plate , serve hot with cream , ice cream , custard or just enjoy it on it's own .
