Healthy Raisin Cookies

  1. In main bowl, combine flours, baking soda, and salt.
  2. In a separate bowl, use an electric mixer to combine the wet ingredients: applesauce, canola oil, splenda, egg, and vanilla extract.
  3. Pour the wet mixture into the flour bowl and mix using a spatula.
  4. Add raisins or chocolate chips depending on taste, and kneed by hand.
  5. Round into 1 tablespoon balls and flatten onto cookie sheet.
  6. Bake at 350F for 15 minutes.
