Healthy Raisin Cookies
- 1 cup whole wheat flour
- 34 cup all-purpose flour
- 12 teaspoon baking soda
- 12 teaspoon salt
- 14 cup unsweetened applesauce
- 14 cup canola oil
- 1 cup Splenda granular
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup raisins
- In main bowl, combine flours, baking soda, and salt.
- In a separate bowl, use an electric mixer to combine the wet ingredients: applesauce, canola oil, splenda, egg, and vanilla extract.
- Pour the wet mixture into the flour bowl and mix using a spatula.
- Add raisins or chocolate chips depending on taste, and kneed by hand.
- Round into 1 tablespoon balls and flatten onto cookie sheet.
- Bake at 350F for 15 minutes.
