Tomato Crisp
- 7 lbs sliced green tomatoes
- 2 gallons water
- 3 cups limes
- 4 lbs sugar
- 1 teaspoon ground cloves
- 1 teaspoon ginger
- 1 teaspoon allspice
- 1 teaspoon celery seed
- 1 teaspoon mace
- 1 teaspoon cinnamon
- Soak tomatoes in water in which lime has been dissolved for 24 hours.
- Drain.
- Soak in fresh water for 4 hours, changing water every hour.
- Drain.
- Make syrup using lime, sugar, ground cloves, ginger, allspice, celery seed, mace, and cinnamon.
- Bring to a boiling point.
- Pour over tomatoes and let stand over night.
- In morning, boil one hour and seal.
