Tomato Crisp

  1. Soak tomatoes in water in which lime has been dissolved for 24 hours.
  2. Drain.
  3. Soak in fresh water for 4 hours, changing water every hour.
  4. Drain.
  5. Make syrup using lime, sugar, ground cloves, ginger, allspice, celery seed, mace, and cinnamon.
  6. Bring to a boiling point.
  7. Pour over tomatoes and let stand over night.
  8. In morning, boil one hour and seal.
