Chicken Tomato Simmer (Chicken Cacciatora)
- 500 grams Chicken thighs with or without bones
- 1 tbsp Garlic oil
- 1 clove Finely minced garlic
- 1 Onion
- 1 medium Carrot
- 400 grams Canned tomatoes
- 250 ml Water
- 50 ml White wine
- 2 tsp Soup stock cube
- 2 tsp Sugar
- 1 Herb salt
- 1 Black pepper
- 1 Finely chopped parsley
- Mince the onions and carrots.
- Cut the chicken into 6 pieces, season with salt and pepper, then use a tea strainer to coat with cake flour.
- Add the garlic oil to a thick frying pan, then cook the chicken with the skin side down.
- Once it's browned, turn it over and cook the other side, then remove.
- Add the minced garlic and vegetables to the frying pan from Step 2 and cook.
- Put the meat back and add white wine.
- Add the canned tomatoes, water, and soup stock to Step 3, and simmer for 30 minutes.
- Flavor with sugar, black pepper, and herb salt.
