Plum-Coconut Crisp

  1. Heat oven to 350 degrees F.
  2. Mix 1/4 cup granulated sugar, brown sugar and flour in medium bowl.
  3. Use pastry blender or 2 knives to cut in butter until mixture resembles coarse crumbs.
  4. Add coconut; mix well.
  5. Combine water and remaining sugar in large bowl.
  6. Add plums; mix lightly.
  7. Add dry pudding mix; toss to evenly coat plums.
  8. Spoon into 8-inch square baking dish sprayed with cooking spray.
  9. Sprinkle with coconut mixture.
  10. Bake 30 min.
  11. or until plum mixture is hot and bubbly, and topping is golden brown.
  12. Cool slightly before serving topped with Cool Whip.
