Bacon, Bean, And Garlic Soup Recipe

  1. Chop 2 slices of the bacon and place in a bowl.
  2. Microwave on HIGH power for 3-4 min till fat runs out and the bacon is well cooked.
  3. Stir the bacon halfway through cooking to separate the pcs.
  4. Transfer to a plate lined with paper towels and leave to cold.
  5. When cold, the bacon pcs should be crisp and dry.
  6. Place the carrot, celery, onion, and oil in a large bowl.
  7. Cover and microwave on HIGH power for 4 min.
  8. Chop the remaining bacon and add in to the bowl with garlic.
  9. Cover and microwave on HIGH power for 2 min.
  10. Add in the stock, the contents of the can of tomatoes, the thyme, beans, and tomato paste.
  11. Cover and microwave on HIGH power for 8 min, stirring halfway through.
  12. Season to taste.
  13. Ladle the soup into warmed bowls and sprinkle with the crisp bacon and grated cheese.
