Watermelon Cookie Slices

  1. Combine butter and sugar in bowl.
  2. Beat at medium speed, scraping bowl often, until creamy.
  3. Add egg, vanilla and red food color; continue beating until well mixed.
  4. Add flour, baking powder and salt; beat at low speed until well mixed.
  5. Stir in chocolate chips.
  6. Divide dough in half; shape each half into 4 1/2-inch log.
  7. Combine green and yellow decorator sugars in pie pan.
  8. Roll each log in sugar mixture until outside is well coated.
  9. Wrap each log in plastic food wrap; refrigerate 1-2 hours or until firm.
  10. Heat oven to 375F.
  11. Cut logs in half lengthwise; cut each half into 1/4-inch slices with sharp, serrated knife.
  12. Place 1 inch apart onto ungreased cookie sheets.
  13. Bake 7-9 minutes or until set.
  14. Cool completely.
