Watermelon Cookie Slices
- 3/4 cup Land O Lakes Butter, softened
- 3/4 cup sugar
- 1 Land O Lakes Egg
- 1/2 teaspoon vanilla
- 8 to 9 drops red food color or 1/16 teaspoon pink paste food color
- 2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup miniature real semi-sweet chocolate chips
- 1/4 cup green decorator sugar
- 1 tablespoon yellow or gold decorator sugar
- Combine butter and sugar in bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add egg, vanilla and red food color; continue beating until well mixed.
- Add flour, baking powder and salt; beat at low speed until well mixed.
- Stir in chocolate chips.
- Divide dough in half; shape each half into 4 1/2-inch log.
- Combine green and yellow decorator sugars in pie pan.
- Roll each log in sugar mixture until outside is well coated.
- Wrap each log in plastic food wrap; refrigerate 1-2 hours or until firm.
- Heat oven to 375F.
- Cut logs in half lengthwise; cut each half into 1/4-inch slices with sharp, serrated knife.
- Place 1 inch apart onto ungreased cookie sheets.
- Bake 7-9 minutes or until set.
- Cool completely.
