Indian Summer Tomato Salad

  1. Arrange tomato slices on a platter.
  2. Sprinkle with lime juice.
  3. Warm oil in a small pot over moderate heat.
  4. Add cumin, fennel and chili pod, cook for 30 seconds.
  5. Remove from heat, discard pod and cool.
  6. Whisk in the cilantro; spoon seasoned oil over tomatoes.
  7. Season with salt and pepper; serve.
