Baked chicken

  1. In a large pot add water, sugar, salt, turmeric, garlic, vinegar, margarine, paprika, and onion powder.
  2. Bring to a boil, turn off heat let cool completely.
  3. This is the concentrated brine.
  4. Add chicken to a sanitized cooler or line cooler with a bag, pour brine over the chicken.
  5. Add 1 gallon of water to the concentrated brine.
  6. Stir occasionally about every 2 hours checking temperature.
  7. Add ice to keep the temperature at 45 Fahrenheit.
  8. 7.222 Celsius.
  9. Next day preheat oven 400 Fahrenheit.
  10. Bake in batches if needed bake till done, cooking same parts of chicken in each pan like all thighs, or all legs.
  11. discard the brine.
  12. Serve hope you enjoy!
