Baked chicken
- 1 cup kosher salt
- 2 1/4 cup sugar
- 1/4 cup turmeric
- 1 gallon water
- 1/2 cup distilled white vinegar
- 1/4 cup onion powder
- 1/4 cup granulated garlic powder
- 1/4 cup paprika
- 1 cup margarine
- 1 gallon water
- 40 lb chicken
- 1 large cooler
- 1 ice
- In a large pot add water, sugar, salt, turmeric, garlic, vinegar, margarine, paprika, and onion powder.
- Bring to a boil, turn off heat let cool completely.
- This is the concentrated brine.
- Add chicken to a sanitized cooler or line cooler with a bag, pour brine over the chicken.
- Add 1 gallon of water to the concentrated brine.
- Stir occasionally about every 2 hours checking temperature.
- Add ice to keep the temperature at 45 Fahrenheit.
- 7.222 Celsius.
- Next day preheat oven 400 Fahrenheit.
- Bake in batches if needed bake till done, cooking same parts of chicken in each pan like all thighs, or all legs.
- discard the brine.
