Caribbean Meatloaf
- 1 egg, beaten
- 1-1/2 lb. lean ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1 small onion, finely chopped
- 1/4 cup KRAFT Lite Thousand Island Dressing
- 1/4 cup crushed saltine crackers
- 2 Tbsp. OSCAR MAYER Real Bacon Bits
- 1 red pepper, cut into thin strips
- 1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
- Heat oven to 400F.
- Mix first 6 ingredients.
- Press half the meat mixture onto bottom of 9x5-inch loaf pan.
- Top with peppers and VELVEETA, spreading to within 1/2 inch of edges.
- Cover with remaining meat mixture.
- Bake 45 to 50 min.
- or until done (160F).
- Let stand 5 min.
- before slicing.
