Caribbean Meatloaf

  1. Heat oven to 400F.
  2. Mix first 6 ingredients.
  3. Press half the meat mixture onto bottom of 9x5-inch loaf pan.
  4. Top with peppers and VELVEETA, spreading to within 1/2 inch of edges.
  5. Cover with remaining meat mixture.
  6. Bake 45 to 50 min.
  7. or until done (160F).
  8. Let stand 5 min.
  9. before slicing.
